Founder Callie Carpenter shares the story: "It all began with our family’s cookie recipe. You could say life doesn’t get any better than when you have a warm chocolate chip cookie in your hand. I mean, how cliché is that? But one day our cliché story took a hard right when we discovered one of our family members suffered from extreme food allergies and intolerances. Right then we knew our cookies would have to be completely reinvented, but it would have to be without compromising flavor, texture, and consistency. Honestly, we weren’t sure if this was even possible, but with our family pride on the line, we set out to make a cookie so good and so naturally cookie-ish that you would never be able to tell it was also 100% vegan and gluten-free. Back then, we never imagined we would have the opportunity to sell them to the world.
Once we accomplished our goal, we realized our cookies would be a game changer for those with food intolerances, restrictive diets, and those just wanting to eat healthier. So we set out on a journey to shift the paradigm of what a vegan and gluten-free cookie should taste like. Pacific Northwest Cookie Company was officially born. Some laughed and others mocked, while others even thought it was a joke… that is until they took their first bite. We witnessed jaw-dropping reactions from critics and cynics alike, and the word spread fast about our cookies. Since then, we’ve been baking the best vegan and gluten-free cookies in the game.”
